Extra Crispy Panko Baked Vegetables (CristR)

-3 egg whites

-¾ teaspoon baking powder

-1 medium or small zucchini

-½ red and green bell pepper

-1 medium carrot

-1 cup of cornstarch

-1 1/2 cup panko breadcrumbs

-1 teaspoon grated Parmesan cheese

-salt to taste

-spices of choice (I use dried oregano, paprika and garlic powder)

-Vegetable or olive oil


Mix the egg whites and the baking powder and beat with an electric mixer until a consistency is very similar to meringue.

Mix the cornstarch, Parmesan cheese, spices and salt.

Cut the vegetables into medium-thick sticks (approximately 2 cm)

Pass the vegetables through the cornstarch mixture and then the egg shake, aided by a fork (or a wooden toothpick, or toothpicks) and then by panko, put on a baking tray with buttered and oiled paper. Once placed, drizzle a little oil on top and bake for 25 to 30 minutes in an oven preheated to 180 degrees Celsius.
