Super easy enchiladas by Cristian Romero Díaz

Συνταγές από τη Χιλή – Οι εντσιλαντας… έρχονται στο τραπέζι σας


-6 to 8 Mexican tortillas

-5 eggs (medium size)

-2 tablespoons Greek yogurt (no sweetness or flavor)

-1 ½ teaspoon baking powder

-1 splash of milk

-1/2 green bell pepper

-1/2 red bell pepper

-1 jar or bag of tomato sauce

-100 grams of cheese to melt

-Salt to taste

-spices of choice (I add oregano and garlic powder)


Sauté the peppers cut into medium cubes. Mix the eggs, milk, Greek yogurt and baking powder in a bowl, beat a little with a fork until the mixture rises and add to the pan (it must be deep) with the peppers, stir when It´s necessary, add the tomato sauce and a third of the cheese before the dough sets.

Fill the tortillas with cheese and the curd dough (it should be pasty, but soft), put in an oiled pan, cover with cheese and bake for 15 to 20 minutes at 180 ° Celsius.

And ready!
